Sea fennel

There's loads of sea fennel growing wild around Stoupa and Kardamili beaches, but the only place I've seen using it as a 'foraged' ingredient is the Stoupa Restaurant, where they add it to the horiatiki salad.

Anybody know of any other places where they use this free vegetable?

In Mallorca it is sold commercially pickled in jars, and added to a plate of olives as part of the bread and olives 'cover'

You're right, it's a pitty that it is not used much. I guess it's because it is not commonly known. You must make it yourself...

We just made a lentil salad this lunchtime, including boiled sea fennel, wild regular fennel, and feta cheese - dressed with olive oil!
It may not be a Greek recipe but it was certainly delicious!

Quick update - in England this wild vegetable is called Rock Samphire, and there's loads of it growing on the rocks at the northern end of Kalogria beach, around the cold fresh water spring - go for it, steam it and put it on your Greek salad like they do at The Stoupa Restaurant!
