I have just received a gift of newly produced olive oil from good friends in Kardamili, and it has inspired me to do a Greek lunch today - we have people coming over to see wee James (nearly 7 weeks old) who love good food.
I've got the makings for a Greek salad, (including Kalamata olives obviously), lazy dolmades and gigantes, some baby courgettes to do in the oven with salt and lemon, and I would like to make 'kotopoulo limonato' as made deliciously by Anthes' Mum at Kikis in Kardamili.
Now, I've had a decent stab at this before, but as I was cooking it in the Keith Floyd style, I can't remember exactly what I did, although Anthe has explained it to me !
I'm thinking simply sautee the chicken pieces in olive oil and add water, lemon juice, salt and garlic. Then simmer for an hour or so until cooked. Should be lovely and light and moist.
Any builds in the next 3 hours gratefully received !
